  • 1 lb. lean ground beef
  • Salt and pepper to taste
  • 3 T. butter
  • 1 onion, diced
  • 3 T. all-purpose flour
  • 1 tsp. dried thyme
  • 3 C. milk
  • 3 C. cheddar cheese, shredded
  • 6-8 potatoes, peeled and thinly sliced

Preheat oven to 375 degrees. In a skillet, brown beef and season with salt and pepper; set aside. In a saucepan, melt butter and sauté onion until tender. Whisk in flour and cook for a few minutes. Stir in milk and thyme, bring to a boil, remove from heat, and mix in cheddar until melted. In a greased baking dish, layer potatoes, beef, and sauce. Cover with foil and bake for 45 minutes; uncover and bake for an additional 15 minutes until golden.
