  • Butter-flavored spray
  • 2/3 C. corn flake crumbs
  • 1/4 tsp. salt
  • 1/4 tsp. ground red pepper
  • 4 4 oz. fillets of fish
  • 2 egg whites, lightly beaten
  • 1/2 C. corn relish

Line shallow pan with aluminum foil and coat with cooking spray. Combine crumbs, salt pepper in small bowl and stir well. Dip fish in egg whites and dredge in crumb mixture. Place fish in pan. Bake at 450 degrees for 8-10 minutes or until fish flakes easily when tested with a fork. Serve immediately with corn relish.
