I got this recipe from a very good friend that got it from her grandmother. The first time I tasted this sweet potato casserole, I just couldn't believe how delicious it was! They have been making it for years. Everyone I have ever served it to wanted the recipe. It is a Thanksgiving staple.

1 Casserole


  • 3-4 lg. baked sweet potatoes or 2 cans sweet potatoes, mashed
  • 1/2 C. pineapple juice or milk
  • 1/2 C. sugars (1/4 C. granulated white sugar + 1/4 C. brown sugar)
  • 1/2 stick butter, melted
  • 1 1/2 tsp vanilla
  • 1/2 tsp. salt
  • 3/4 tsp. nutmeg
  • 1 tsp. cinnamon
  • 2 egg
  • Topping (optional):
  • 1/2 C. brown sugar
  • 1 C. pecans
  • 1/3 C. flour
  • 1/3 C. melted butter

In a large bowl, combine sweet potato, sugar, eggs, salt and butter. Mix well. Add remaining ingredients and beat until fluffy. I use a mixer for the whole process. Pour into buttered dish.To prepare topping, combine brown sugar, pecans, flour and melted butter. Spread topping on top of casserole. Bake at 350 degrees for 45-50 minutes.
