Happy America Day! Celebrate with this all american favorite: blackberry pie. Here's the twist they are in bar form. This easy recipe is sure to be a hit on the Fourth of July!

  • 1 C. white sugar
  • 1 tsp. baking powder
  • 3 C. all-purpose flour
  • 1 C. butter
  • 1 egg
  • 1/4 tsp. salt
  • Lemon juice
  • Lemon zest
  • 4 C. fresh blackberries
  • 1/2 C. white sugar
  • 2 tsp. cornstarch

Preheat the oven to 375 degrees and grease a baking dish. Mix together sugar, flour, and baking powder.
Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly.
Pat half of dough into the prepared pan.
In a separate bowl mix the rest of the sugar the corn starch and the lemon juice. Slowly mix in the blackberries so they don't smash. Pour in this mixture into the pan and put the second half of the dough on top.
Bake for 10-15 minutes and cool before cutting into squares.
