Blue Cheese Spread with Spiced Walnuts

Cream cheese, blue cheese, walnuts and spices give this simple spread an elegant flair.

  • 8 oz. package cream cheese
  • 1 oz. crumbled bleu cheese
  • 2 Tbs. softened butter
  • 1 1/2 oz. goat cheese
  • 1 green onion, minced
  • 2 Tbs. brandy
  • Chopped parsley
  • Chopped chives
  • 2 tsp. habanero oil
  • 2 tsp. olive oil
  • 1/2 C. chopped walnuts
  • 2 tsp. sugar
  • 1/4 tsp. cumin
  • 1/4 tsp. cardamom
  • 1/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Cream together the cream cheese, bleu cheese, butter and goat cheese. Add green onions and brandy. Heat the oils in a large sauté pan. Add walnuts and sauté for about five minutes or until golden brown. Add sugar, stirring until melted, about three minutes. Mix together cumin, cardamom, cinnamon, salt and pepper in a small bowl. Add nuts to spice mix and toss to coat. Let cool. Grind in food processor until fine. To serve, mound the cream cheese mixture one-inch high. Sprinkle with parsley and chives, and then top with nuts.
