  • 4 cups of egg whites, lightly beaten
  • 2 cups of mixed greens
  • ½ tablespoon of onion, minced
  • ½ tablespoon of garlic, minced
  • Salt and pepper to season
  • 1 tablespoon of coconut oil
  • Shredded mozzarella cheese, for garnish

In a small mixing bowl, lightly beat the egg whites and season with salt and pepper.
Using a small skillet or pan, drizzle 1 tablespoon of coconut oil. Add in the minced onions and garlic and cook them until they are softened and translucent over medium heat. Slowly add the beaten whites to the pan and lower the heat to medium low heat.
Using a silicone spatula, arrange the edges to create the omelets shape. Let the egg whites cook for about 3-5 minutes or until it appears less runny. Once the eggs whites are cooked on onside, carefully flip it over and cook on the other side for 3-5 minutes. Flip the omelets again and lower the heat.
Place the mixed greens on one side and fold the omelets in half. Garnish the omelets with shredded mozzarella cheese.
