  • 1 C. buttermilk pancake mix
  • 1/4 C. melted butter
  • 1/2 C. sugar
  • 1/2 C. milk
  • 3 C. sliced peaches (fresh, frozen, or canned)
  • 1/2 C. blueberries (fresh or frozen)
  • 1/4 tsp. ground cinnamon

Preheat oven to 375 degrees.  Melt butter in 8x8 inch baking dish, add pancake mix, sugar, and milk, and stir with a fork until just combined.  Do not over-mix.  Scatter fruit evenly over batter.  Sprinkle with cinnamon and bake for 30 minutes or until golden)
