  • 4 C. fresh basil
  • 1/4 C. pine nuts
  • 2 cloves garlic
  • 1/4 C. Parmesan
  • 1/2 C. virgin olive oil
  • pinch of salt
  • 2 lb. gnocchi
  • 1 tsp. olive oil
  • 3 C. cherry tomatoes, halved
  • 1 bunch arugula, chopped
  • 1 1/2 C. mini fresh mozzarella balls or grated mozzarella

Add basil, pine nuts, garlic, and Parmesan to a blender and mix until a pesto forms. Cook and drain gnocchi according to package instructions. Return drained gnocchi to your cooking pan and drizzle with olive oil. Add the tomatoes, arugula, and mozzarella. Spoon in 1/2-cup of the pesto and toss to combine. Serve immediately and garnish with additional Parmesan if desired.
