This bread pudding with candied yams is the best way to segue from Thanksgiving into the winter months! The sweetness of the yams is reminiscent of the Thanksgiving holiday, and the bread pudding is sure to warm you up on a snowy day. Enjoy!

  • 3 eggs, separated
  • 2 C. heavy cream, hot
  • 6 C. cornbread, crumbled or cubed
  • 2 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 2 C. candied yams (pureed, chopped, or sliced is fine)
  • 1/2 C. sugar
  • raisins, for garnish

Preheat your oven to 350 degrees.  Soak cornbread in the hot milk. 

Mix the yolks with the sugar until they form a cream. In a separate bowl, beat the egg whites until they form stiff peaks. Fold gently into the bread and milk with the remaining ingredients. 

Bake in a greased 8x12 baking dish for 45 minutes or until hot throughout. Serve warm and sprinklewith raisins on top.
