Although sushi rolls are already a fusion product of Japanese cuisine and Western influences, we’re taking it one step further. Stuffed with breakfast essentials like bacon, egg and avocado, this cheesy roll made ahead of time makes mornings swift, easy and very filling.

  • 18 slices of bacon
  • 1 avocado, pitted and sliced
  • 4 eggs
  • 3 tablespoons of milk
  • 1 cup of rice, cooked
  • 2 cups of cheddar cheese
  • 1 teaspoon of butter
  • 1 teaspoon of minced garlic
  • salt and pepper

Preheat oven to 400 degrees Fahrenheit.
In a bowl, beat the eggs and milk together. Add rice and minced garlic to the mixture.
Heat butter over medium-high heat in a pan. Scramble the egg/rice mixture in the pan and season with salt and pepper. Stir in cheddar cheese until melted.
Lie out 6 pieces of bacon and scoop the filling onto the bacon in a vertical strip going across all the bacon pieces. Place some avocado slices on top of the strip of filling, then roll it all up as tightly as you can. Repeat for the other two sets of 6 pieces of bacon.
Place the rolls onto a greased sheet pan and bake in the oven for about 15 minutes until slightly crispy.
Let them cool, then pat down with paper towels to absorb some of the grease. Save the rolls in foils to reheat for breakfast morning, or slice and serve immediately!
