  • 1 C. all-purpose flour
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • Dash salt
  • 2 ½ sticks butter, divided
  • 1/3 + ¼ C. peanut butter, divided
  • ½ C. sugar
  • ½ C. brown sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 C. quick cooking oats
  • ¾ C. powdered sugar

Preheat oven to 350 degrees. In a bowl, combine flour, baking powder, baking soda, and salt; set aside. In a large bowl, use an electric mixer to beat together 2 sticks of butter and 1/3 cup of peanut butter until smooth. Mix in egg and vanilla. Add in flour mixture and stir in oats. Refrigerate to set up, portion cookies onto a parchment paper baking sheet, and bake for 8 to 10 minutes until golden. Let cool completely. In a bowl, cream together remaining butter, peanut butter, and powdered sugar until smooth. Assemble cookie sandwiches with peanut butter filling.
