We created a wonderful seasonal recipe for the traditional bruschetta. Topped with feta cheese and cranberries, you have to serve this as an appetizer for your remaining holiday parties.

  • 1 loaf French baguette, sliced into 1-inch slices
  • 8 Roma tomatoes, seeded and chopped
  • 4 Tbs. parsley, chopped
  • 4 Tbs. basil, chopped
  • 3 Tbs. red wine vinegar
  • 3 Tbs. olive oil
  • 2 lb. feta, cubed
  • 1/2 lb. dried cranberries
  • Salt and pepper to taste

Toast bread slices under broiler for about 2 minutes or until crisp. Mix remaining ingredients in a large bowl. Top the bread slices with mixture.
