Bruschetta with Fresh Tomatoes and Basil

  • 1 lg. crusty loaf Italian or French bread
  • 2-4 lg. garlic cloves, minced
  • 6 plum tomatoes, chopped to 1/4 inch
  • 1 lg. bunch fresh basil, chopped, plus whole basil leaves for garnish
  • 1/2 C. good quality olive oil (garlic oil is also great here)
  • 1/4 C. Romano or Parmesan cheese, grated (can also add Asiago cheese)
  • salt and pepper to taste
  • 2 C. mozzarella cheese, sliced from block

Slice bread in half lengthwise or in individual thick slices. Combine the next six ingredients in a large bowl; stir so it is well mixed. Spread on bread. Top with 2 C. mozzarella cheese. Bake or broil for 15 minutes at 350 degrees until cheese sizzles. Top with whole basil leaves.
