  • 1 pack of empanada disco dough (10 large pieces)
  • 2 cups of cooked, shredded chicken
  • ½ cup of hot sauce
  • 1 package of cream cheese (8 oz.), room temperature
  • ¼ cup of Ranch dressing
  • ¼ cup of blue cheese dressing
  • 1 cup of shredded Mexican blend cheese

Preheat oven to 375 degrees Fahrenheit.
In a bowl, combine hot sauce, cream cheese, Ranch and blue cheese dressing until smooth. Fold in chicken and Mexican blend cheese.
Scoop a big spoonful of the filling onto the middle of an empanada disco. Fold the dough over, then seal the edges with a fork. Repeat for the rest.
Place the empanadas onto a greased sheet pan and bake for 15 minutes, or until golden and crispy on top. Cool, then serve!
