Buttermilk Doughnuts

Doughnuts don't have to be difficult. This is a more simple recipe to bake and fry truly delicious doughnuts.

  • 3 eggs
  • 3 Tbs. shortening
  • 4 1/2 C. sifted flour
  • 1 1/2 tsp. cream of tartar
  • 1/2 tsp. nutmeg
  • 1 C. sugar
  • 1 C. buttermilk
  • 1 1/2 tsp. soda
  • 1/2 tsp. salt
  • cinnamon

Beat the eggs until thick and lemon colored. Add sugar, beating it until the mixture is light and fluffy. Add the softened shortening and continue beating until mixture is well-blended. Sift the flour, measure and sift again with the soda, cream of tartar, salt and nutmeg. Add to first mixture alternately with the buttermilk, until a dough is formed. Knead lightly for 30 seconds to make smooth.

Chill dough in refrigerator until firm. Roll out on floured board and cut with floured doughnut cutter. Fry in deep, hot fat at 385 degrees until golden brown. Drain on unglazed paper. When cool, roll in granulated sugar mixed with a small amount of cinnamon.
