  • 3 cups of baking flour
  • 2 eggs
  • 2 cups of sugar, divided
  • 2 cups of canned pineapples, crushed
  • 1 cup of coconut, shredded and sweetened
  • 1 cup of pecans, chopped
  • 6 tablespoon of butter
  • 2 tablespoon of bourbon
  • 1 teaspoon of baking soda
  • ½ teaspoon of salt

Preheat oven to 350 degrees Fahrenheit. Meanwhile, melt butter with one cup of sugar, walnuts, and bourbon in a saucepan. Let this come to a boil and remove from heat once the sauce is thick. As the mixture cools, combine flour, eggs, remaining sugar, pineapples, coconut, baking soda and salt in a large bowl. Add the butter and walnut mixture and blend well. Pour into a baking pan and let cook for 30 minutes. Make sure to let cool before serving!
