You know those apples covered in caramel that everyone loves to eat, but they're such a mess?! Well, now you can have them in a warm, goey dessert with these caramel apple empanadas! I can't explain how heavenly these are, you will just have to try them ASAP! They're like mini apple pies but so much better!

Serving Size / Yield

12 empanadas


  • 2 apples, peeled, cored, and chopped
  • 2 Tbs. lemon juice
  • 2 Tbs. brown sugar
  • 8 oz. caramel candies
  • 1 tsp. milk
  • 1 egg, lightly beaten
  • 1 package pie crust dough

Preheat over to 400°
Line a cookie sheet with parchment paper
In a bowl, toss apples with lemon juice
Add brown sugar and coat well
The caramel sauce can be done on the stove or in the microwave. Heat the caramel candies and milk, stirring almost constantly until melted and creamy
Roll out the pie dough and cut out 4-ich (diameter) circles (cookie-cutter is easiest!)
Drop a dollar-coin amount of apple mixture into the circle and top with a tsp. of caramel sauce
Brush edges with egg
Fold in half and crimp edges with a fork
Bake for about 12 minutes or until golden brown
Sprinkle with sugar to top or with left over caramel sauce
