  • 2 C. shredded wheat cereal
  • 2 eggs
  • 2 C. milk
  • 1/2 C. maple syrup
  • 1 Tbs. honey
  • 1/2 tsp. salt
  • 1 banana
  • 2 Tbs. dried cranberry
  • 1/4 C. crushed walnuts

Preheat the oven to 390 degrees. Cut bananas into half-inch slices. Cut wheat cereal in half or into bite-sized pieces. In a saucepan, heat maple syrup and add salt. Simmer over low heat until it thickens. Turn off the heat and add walnuts and bananas. Stir until well coated. In a bowl, beat eggs and add milk and honey. Mix well. Place cereal in the baking dish and pour in the batter, add caramel walnuts and bananas, and sprinkle in cranberries. Bake for 15-18 minutes.
