  • 32oz chicken broth
  • 1 head cauliflower, trimmed and chopped
  • 1 cup leek, diced
  • 3 cloves garlic, minced
  • ¼ teaspoon pepper
  • 2 cups cheddar cheese, shredded
  • ½ cup heavy cream
  • salt
  • 6 sliced bacon, cooked and crumbled

Add the cauliflower, broth, leeks, garlic and pepper to the crockpot. Cover and cook on low for 6-7 hours. Add the contents of the crockpot to a blender and puree. Add back to the crockpot and stir in the cheese, heavy cream and salt to taste. Stir well and serve topped with bacon bits.
