  • 1/4 C. Worcestershire sauce
  • 1/4 C. low sodium soy sauce
  • 1 C. club soda
  • 1/4 C. olive oil
  • 1/2 C. Truvia™ natural sweetener
  • 1/4 Tbs. cider vinegar
  • 3 lemons juiced and zested
  • 1/2 C. basil, chopped
  • 1/2 C. parsley chopped
  • 2 Tbs. Dijon mustard
  • 1 tsp. celery seed
  • 1 Tbs. mustard seed
  • 4 garlic, minced
  • 1 (3 1/2-lb.) pork loin roast, tenderized
  • Kosher or Sea salt
  • Pepper

In a small bowl, combine Worcestershire sauce, soy sauce, club soda, olive oil, Truvia™ natural sweetener, vinegar, lemon juice and zest, basil, parsley, mustard, celery seed, mustard seed and garlic. Tenderize the pork loin by placing on a cutting board. Take two forks with both hands and simultaneously jab the fork into the loin multiple times to pierce. Place pork loin roast in a large plastic re-sealable bag and pour marinade over pork loin. Seal and marinate in refrigerator for at least 6 hours (preferably overnight).

Preheat oven to 325 degrees. Remove roast from bag, place in a roasting pan, and save marinade. Roast pork loin at 325 degrees F for about 2 1/2 hours, or to an internal temperature registers 140 degrees F on an instant read the meter. Remove from the oven and let rest for 15 minutes (it will continue to cook during this resting stage). Every 30 minutes while cooking baste the pork with the marinade.

Serve with wild brown rice or string beans. Save the marinade from the roasting pan, once the meat is sliced spoon the juice over the meat or serve on side.
