This chicken bake is cheesy and creamy without being too heavy. Keeping it light with the fresh herbs and tomatoes and spinach, a side of bread is all you need with it for a quick, gourmet lunch.

  • 2 chicken breasts, butterflied and halved
  • 1 tomato, thinly sliced
  • 1 cup of shredded mozzarella cheese
  • 1 cup of spinach
  • 1 cup of heavy cream
  • 1 tablespoon of tomato paste
  • ΒΌ cup of fresh thyme leaves
  • 2 tablespoons of olive oil
  • 1 tablespoon of minced garlic
  • salt and pepper

Preheat oven to 400 degrees Fahrenheit.
In a small dish, whisk together olive oil, minced garlic and salt and pepper. Thoroughly rub the mixture onto each piece of chicken, then place them in a small, greased baking dish.
In a bowl, whisk the heavy cream, tomato paste and salt and pepper together. Pour the mixture over the chicken, then top each piece of chicken with tomato slices, spinach then cheese. Sprinkle the baking dish with salt and pepper and bake for about 20 minutes.
Serve topped with fresh thyme with a side of toast for a filling lunch.
