  • 1 can of diced tomatoes
  • 1 jalapeno, chopped
  • 1 habanero pepper, chopped
  • ½ onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of lime juice
  • 2 teaspoons of dried cilantro
  • 1 teaspoon of cumin
  • ½ teaspoon of sugar
  • Salt and pepper, to taste
  • 2 cans of refried beans
  • 8 flour tortillas
  • 2 cups of sharp cheddar cheese, shredded

To make the salsa, add the tomatoes, jalapeno, habanero pepper, onion, garlic, lime juice, cilantro, cumin, sugar, salt, and pepper into a blender. Blend on high until well combined and smooth. Set aside. Next, warm the refried beans in a pot over medium heat, stirring constantly until hot. Add about a ½ cup of beans to a tortilla and top with 2 heaping tablespoons of salsa and cheese then wrap tightly. Transfer the burrito to an oiled skillet over medium heat and cook for two minutes, or until the tortilla has browned. Serve and enjoy!
