  • 1 Tbs. butter
  • 1/2 medium onion, chopped
  • 1/4 C. flour
  • 1/4 C. butter, melted
  • 2 C. milk
  • 2 C. chicken stock
  • 1/2 lb. fresh broccoli
  • Salt and pepper, to taste
  • 1 1/2 C. mozzarella, shredded

Place butter in saucepan over medium heat. Saute onion until tender. Set aside. Cook flour and melted butter for 4 minutes over medium heat while stirring. Add milk. Continue to stir. Add chicken stock and simmer for 20 minutes. Stir occasionally. Add onion and broccoli. Cook on low heat for until veggies or tender or 20 minutes. When done, top with shredded cheese. Stir before serving.
