This casserole is simple but delicious. Toasted cubes of French bread are combined with cubed chicken and sautéed broccoli and sprinkled in cheese for the essential finishing touch.

  • ¾ pound boneless skinless chicken breasts
  • 4 tablespoons butter
  • 1 cup shredded cheese
  • 3 cups broccoli
  • 1 teaspoon onion powder
  • ¼ teaspoon pepper
  • 6 cubed French bread
  • 2 eggs
  • ¾ cup milk
  • 2/3 cup cream of onion soup

Cut the chicken into cubes. Heat half of the butter in a skillet over medium-high heat and add the chicken. Cook until the meat is no longer pink and then add the broccoli, onion powder and pepper. Heat until the chicken is cooked through and then remove from the stove. Keep the broccoli and chicken warm. Toast the bread cubes in the rest of the butter in the skillet. Mix the milk, soup and eggs in a bowl and then pour this mixture over the bread. Stir the in the chicken and broccoli spiced mixture. Sprinkle cheese over the dish. Bake for 20 minutes.
