These little tomatoes make a great side dish. Serve these on top of a bed of pasta or alongside a grilled cheese sandwich.

  • 8 tomatoes, halved
  • 16 small mozzarella balls
  • ¼ cup of basil pesto
  • ¼ cup of parmesan cheese, grated
  • 3 tablespoons of olive oil

As the oven preheats to 400 degrees, arrange the tomatoes in a skillet or on a baking tray. Fill each tomato half with one mozzarella cheese ball, then spread 1 teaspoon of pesto on top. Sprinkle Parmesan cheese over the tomatoes. Drizzle with olive oil, and then roast for 20 minutes. Serve while hot!
