This is a quick and easy appetizer to prepare and make. I love all the vegetables in them and sometimes I will add whatever else I have sitting around in my kitchen! You can also do these on the grill as well!

  • Quesadillas:
  • 2 C. shredded cheddar cheese
  • 1/3 C. chopped green chilies
  • 1/2 C. chopped tomatoes
  • 1/4 C. chopped red onion
  • 1 C. chopped canned chicken
  • 1 C. chopped cooked bacon
  • 5 big flour tortillas
  • Dipping Sauce:
  • 1/2 C. mayonnaise
  • 1 large garlic clove, minced
  • 2 Tbs. fresh cilantro, finely chopped
  • Juice from 1 large lime

To make quesadillas, combine all ingredients in large bowl. Spread mixture onto one half of each tortilla. Fold tortilla in half. Spray large skillet with cooking spray and heat over medium heat. Place tortilla in skillet and cook each side until golden brown and cheese is melted. Cut each tortilla into quarters.

To make dipping sauce, combine all ingredients in small. Serve with Quesadillas.
