  • 3 chicken breasts, cut into chunks
  • 8 banana peppers, cut into chunks
  • 3 tomatoes, cut into chunks
  • 6 cups of lettuce
  • 1 cucumber, cut into chunks
  • 1 small red onion, sliced
  • 1 bulk of feta cheese (8 oz.), sliced
  • 2 tablespoons of apple cider vinegar
  • 2 tablespoons of olive oil
  • ¼ cup of Italian seasoning
  • salt and pepper

In a pan, heat olive oil over medium-high heat. Sauté the chicken pieces with Italian seasoning and salt and pepper for about 10 minutes until everything is cooked.
In a large bowl, toss together: banana peppers, tomatoes, lettuce and cucumber with apple cider vinegar and salt and pepper.
Distribute salad into bowls and top with feta, chicken and red onion slices. Enjoy!
