These colorful appetizers are a treat for both eyes and taste buds, making them a delight at any event. Each skewer is a simply pleasing mixture of garden greens and salty meats that is easy to eat as they are to make.

  • 1 zucchini, sliced into long strips
  • 1 cup of cherry tomatoes
  • 1 cup of mozzarella balls
  • ½ cup of black olives
  • 1 package of salami (4 oz.)
  • 1 can of canned chicken breast (12 oz.)
  • 1 tablespoon of olive oil
  • salt and pepper

In a pan, heat olive oil over medium heat. Cook the zucchini slices 5 minutes on each side as you sprinkle with salt. When you are done with the zucchini, quickly sauté the chicken with salt and pepper in the remaining oil. Set zucchini and chicken aside to cool.
Alternate among zucchini slices, tomatoes, mozzarella, black olives, salami and chicken as you pierce each ingredient onto a skewer. Continue until you run out of ingredients/skewers.
Chill on a plate until the event starts. Enjoy!
