  • 2 pounds skinless boneless chicken breast
  • ½ cup cooking oil
  • 1 ½ cups chopped onion
  • 1 cup yogurt
  • 1 teaspoon salt
  • 2 tablespoon chopped cilantro
  • 1 can crushed tomatoes
  • 1 tablespoon water
  • 1 teaspoon cayenne pepper
  • 2 teaspoon turmeric
  • 1 tablespoon curry powder
  • 1 ½ teaspoon minced ginger root
  • 1 tablespoon minced garlic
  • 1 teaspoon garam masala

Sprinkle 2 teaspoons of salt on the chicken breasts and halve the chicken breasts. Heat the oil over high heat in a large skillet. Cook the chicken in batches until the chicken is browned. Set aside the meat and reduce the heat. Add the onion, ginger, garlic, and remaining oil. Cook for about 8 minutes. Add the curry powder, turmeric, cayenne, and water to the skillet and stir for 1 minute. Add the tomatoes, yogurt, 1 tablespoon cilantro, and only 1 teaspoon of salt into the skillet as well. Then add the chicken back to the skillet. Add ½ cup water and bring everything to a boil. Coat the chicken with sauce. Sprinkle the garam masala and the remaining cilantro over the chicken. Cover the pan and simmer for 20 minutes. Serve with white rice.
