  • 1 lb. chicken breasts, boneless and skinless
  • 2 Tbs. curry powder
  • 1/4 tsp. ground cinnamon
  • 2 Tbs. olive oil
  • 1 medium yellow onion, sliced
  • 1 1/2 C. chicken broth
  • 1 C. heavy cream
  • 1 tsp. salt
  • 1/4 tsp. pepper

Cut chicken in 1/2 inch pieces and place in bowl. Sprinkle with curry and cinnamon. Mix. Set aside. Heat 1 Tbs. olive oil in large skillet. Add onions and cook for 4 to 5 minutes. Transfer to plate. Heat remaining oil in the skillet. Add the chicken and cook for about 4 to 5 minutes or until browned. Add the broth, cream, salt and pepper. Bring to a simmer. Return the onion to the skillet and heat chicken for about 6 to 7 minutes or until cooked through.
