Chicken or Pork Pot Pie

Pot pie with a slight crunch that is great with buttery bread sticks or biscuits.

  • 3-4 medium potatoes (or 6-8 red potatoes), cut into bite size pieces (peeled or not)
  • 2 lb. cooked and seasoned chicken tenders or breakfast pork chops, cut into bite size pieces
  • 2 cans mixed vegetables
  • 2 Tbs. extra virgin olive oil
  • 2 Tbs. poultry seasoning
  • 1 Tbs. onion powder
  • 2 Tbs. garlic powder
  • 1 Tbs. thyme
  • 1 Tbs. cilantro
  • 3 cans chicken or pork gravy, warmed
  • 2 boxes stuffing (or make your own)


Preheat oven to 350 degrees. Add cooked chicken or pork and vegetables into gravy mix until coated. Make stuffing. Mix potatoes into gravy mixture. Pour gravy mixture into a sprayed 9x13-inch baking dish. Cover with stuffing. Bake at 350 for 30-45 minutes orĀ until gravy is bubbling and stuffing is crispy. Let set 5 minutes and cut into 6-8 pieces or spoon out.
