  • 10 large tortillas
  • 1 pound of chicken, diced
  • 3 cups of cheddar cheese, shredded
  • ½ cup of cilantro
  • ½ cup tomato, diced
  • ½ cup of green bell pepper, diced
  • 1 tablespoon of butter
  • ½ teaspoon of garlic powder
  • ½ teaspoon of chili powder
  • ½ teaspoon of coriander powder
  • ½ teaspoon of cumin
  • ½ teaspoon of paprika
  • ½ teaspoon of cayenne
  • ¼ teaspoon of salt
  • ¼ teaspoon of pepper

In a large greased skillet over medium heat, sauté the chicken with garlic powder, chili powder, coriander powder, cumin, paprika, cayenne, salt and pepper for 10 minutes. Lower the heat and add the cilantro, tomato and bell pepper and cook for an additional 5 minutes. In a separate skillet, melt butter over medium heat and grill the tortillas. Add a generous portion of chicken and cheese, then fold the tortilla over. Cut down the middle and serve while hot. Enjoy!
