This is healthier than a cookie, but just as tasty! This oatmeal bar is soft, gooey and chewy goodness. Dark chocolate is a great source of antioxidants, but if you like some added sweetness use milk chocolate instead.

  • 2 cups of quick oats
  • 1 cup of smooth peanut butter
  • 2/3 cup of dark chocolate chips, divided
  • ½ cup of raw honey
  • ¼ teaspoon of vanilla
  • 1/4 teaspoon of salt

As the oven preheats to 350 degrees, mix together the quick oats, peanut butter, ½ cup of chocolate chips, honey, vanilla, and salt a large bowl. Once well blended, pour the mixture into a greased pan and bake for 15 minutes. While the bars bake, melt the remaining chocolate over low heat. Drizzle the bars with the melted chocolate and enjoy for breakfast or as a healthy snack!
