You can enjoy these wonderful chocolate cookies by themselves, but they taste even better as sandwiches. The creamy frosting will leave you wanting more in no time.

  • Chocolate Cookies:
  • 1/2 C. and 1 T. all-purpose flour
  • 1/6 C. unsweetened cocoa powder
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/8 tsp. kosher salt
  • 1/4 C. unsalted butter, at room temperature
  • 1/4 C. light brown sugar
  • 1/4 C. granulated sugar
  • 1/2 egg, at room temperature
  • 1/4 tsp. vanilla extract
  • 1/2 C. chocolate chips
  • Sandwich Filling:
  • 1/4 C. (2 oz.) cream cheese, at room temperature
  • 1 1/4 C. powdered sugar
  • 1/4 tsp. vanilla extract

Place an oven rack in the middle of your oven and preheat the oven to 325 degrees F. Use parchment paper to line 1-2 baking sheets and set aside. Take out a medium bowl and whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Beat together the butter, brown sugar, and granulated sugar using an electric stand mixer. Beat in the egg and vanilla and then when the machine is still mixing, slowly add in the flour mixture. When the dough is just blended, stir in the chocolate chips. Use an ice cream scoop to add the dough onto the prepared baking sheet. Create balls out of the dough and gently flatten the tops of each ball. Bake for around 15 minutes, which is about how long it should take for the tops of the cookies to begin to crack.

Let the cookies cool on a wire rack for about 20 minutes. When the cookies are cooling, you can prepare the filling. Take out a medium bowl and beat the cream cheese and vanilla using an electric mixer until the mixture reaches a fluffy consistency. Slowly add in the powdered sugar and combine until smooth. If necessary, add 1/2 tsp. water at a time so the frosting can be easier to spread. When finished, spread the frosting onto the flat side of half of the prepared cookies. Place the remaining cookies on top. Refrigerate for 30 minutes before serving. Feel free to top with any additional powdered sugar.
