  • 3 Egg whites
  • 2/3 cups of Granulated sugar
  • 1 teaspoon of vinegar
  • 1/8 cups of corn flour
  • ½ teaspoon Vanilla extract
  • Filling:
  • 1 cup of whipping cream
  • Confectioners’ sugar
  • ½ teaspoon of Vanilla extract
  • Fresh Strawberries, halved
  • Fresh Figs, halved

Preheat the oven to 210F.
Using an electric mixing bowl, whisk the egg whites and vinegar until it peaks a soft form. Slowly add the granulated sugar and beat it with the mixture till it peaks a smooth and fluffy form and the sugar is fully dissolved. Then add the corn flour and vanilla extract to fold into the mixture. The mixture should have a very stiff and shiny peak. Try not to overbeat the mixture.
With a Ziploc bag, fill the mixture into the bag and cut of the tip.
Using a round baking pan, grease the pan with melted butter and place the parchment paper onto the pan. Draw a circle onto the parchment paper to outline the meringue and fill in it about 2 inches height.
With a palette knife, smooth out the lines. Bake the meringue for 1 to 1 ½ hours. To make sure it is nicely baked, the meringue will look dry and crisp.
In a large mixing bowl, mix together the whipping cream, vanilla extract, and confections sugar. Set it aside in the refrigerator for 20-30 minutes.
With a large Ziploc bag, place the filling in the bag and snip of the tip. Begin to place the whipping cream on top of the meringue. Garnish the cake with strawberries and figs.
