  • 2 tsp. vegetable oil or butter
  • 4 tsp. fresh cilantro
  • 1 1/3 C white basmati rice
  • 2 cup water
  • 1 tsp sea salt
  • 2 Limes
  • 1 red pepper, diced
  • 2 C. cooked pork, cubed
  • Soy sauce (optional)

In a large sauce pan heat the oil or butter over low heat.  Add rice and lime juice and stir for one minute.  Then add the water and salt.  Bring to a full rolling boil.  When boiling begins cover the pan and turn down on low heat and let simmer.  Let sit until rice is tender and water is absorbed.  This should take about 25 minutes.  Stir in cilantro and salt until thoroughly mixed.  Add in pepper and pork and stir. If desired drizzle some soy sauce on top for extra flavor.  Serve up and enjoy.
