Cinnamon-Chocolate Sheet Cake

My mother received this recipe from Jean McCumsey, a devoted volunteer to the cancer patients in the Oncology Clinic at Mason General Hospital, where she used to work.

  • 2 C. sugar
  • 2 C. flour
  • 1 tsp. cinnamon
  • 1 C. water
  • 1/2 C. shortening
  • 1/2 C. margarine
  • 1/4 C. cocoa
  • 2 lg. eggs, slightly beaten
  • 1 tsp. vanilla extract
  • 1/2 C. buttermilk
  • 1 tsp. baking soda
  • Frosting:
  • 1/4 C. cocoa
  • 1/3 C. milk
  • 1 stick margarine
  • 1 tsp. vanilla
  • 1 lb. box powdered sugar
  • chopped nuts

Mix sugar, flour, and cinnamon in bowl. Mix water, shortening, margarine and cocoa in saucepan and bring to a rapid boil; pour over dry ingredients and beat smooth. Add rest of ingredients and beat well. Bake in a greased and floured oblong pan (10x15x1), 30-40 minutes at 350 degrees. Make frosting 5 minutes before cake is done baking.


Bring milk, cocoa, and margarine to a boil. Remove from heat, and beat in powdered sugar. Add nuts and vanilla. Ice cake immediately after removing from oven.
