  • 2 C. flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 C. sugar
  • 1 egg, beaten
  • 2 Tbs. butter, melted
  • 1/2 C. plus 1 1/2 Tbs. orange juice
  • 2 Tbs. hot water
  • 1/2 C. nuts, chopped
  • 1 C. fresh cranberries
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg

Begin by preheating oven to 350 degrees.  Blend together flour, salt, baking powder, baking soda, and sugar.  In a separate bowl, combine egg, butter, orange juice, and water.  Stir liquid ingredients into dry ingredients only until evenly moistened.  Stir in cranberries, nuts, cinnamon, and nutmeg.  Turn dough into greased and floured loaf pan.  Bake 60-70 minutes until toothpick inserted in center comes out clean.  Let loaf sin int pan for 10 minutes before loosening sides and removing it from pan to cooling rack. Serve up and enjoy.
