  • Nonstick vegetable oil spray
  • 3/4 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup maple syrup
  • 1/2 cup applesauce, unsweetened
  • 1/4 cup vegetable oil
  • 1 teaspoon baking powder
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 1/2 cup cake flour
  • 1/4 teaspoon salt
  • Caramel sauce
  • Walnuts

Preheat oven to 400 degrees. Spray nonstick vegetable oil on a 8-by-8-inch baking pan that is two inches deep. Mix vanilla, egg, maple syrup, apple sauce and vegetable oil in a large bowl. Strain baking powder, brown sugar, baking soda, cinnamon, flour and salt in the same bowl. Stir to mix well. Pour mixture in baking pan. Bake for about 25 minutes. Drizzle with caramel sauce and walnuts to your desire.
