  • 1 1/2 C. sugar
  • 1/2 molasses
  • 3/4 C. corn syrup
  • 1/4 C. water
  • 2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract

In a large pot, stir in sugar, molasses, syrup and water over medium heat until it boils. Use a candy thermometer to heat mixture at 250 degrees. Add butter, cinnamon and salt. Boil mixture to 300 degrees. Mix in baking soda and vanilla quickly. Spread out mixture on non-stick baking sheet and let it cool for several hours. Then, break brittle into small pieces before serving.
