The doctors have always told us that we can never have too much Vitamin C. Why not add it to this light loaf cake for a great fruit dessert?

  • 2 1/4 C. flour
  • 1/2 C. shortening
  • 1 C. Splenda
  • 1/2 tsp. salt
  • 3 tsp. baking powder
  • 2 eggs
  • 1/2 C. milk
  • 1/2 C. orange juice
  • 2 Tbs. grated orange rind

Preheat oven to 350 degrees F. Beat shortening and add sugar gradually. Mix until blended. Combine flour, salt and baking powder. Add well-beaten eggs to the first mixture. Add flour to dough alternating with milk and orange juice. Add grated orange rind. Bake in loaf pan for 40 to 45 minutes.
