  • 4 boneless, skinless chicken breast halves
  • 1/3 C bread crumbs
  • 1/3 C grated Parmesan cheese
  • 1 egg
  • 2 Tbs. olive oil
  • 2 C tomato pasta sauce
  • 1/2 C shredded mozzarella cheese
  • 1 box spaghetti noodles
  • Salad, as desired

In one dish, mix bread crumbs and Parmesan cheese. In another, beat egg. Dip chicken into egg, then coat with bread crumb mixture.

Heat oil in a skillet. Cook chicken in oil for 10 to 15 minutes, until no longer pink in center. Pour pasta sauce around chicken in skillet. Sprinkle mozzarella cheese over chicken.

Follow cooking instructions for spaghetti.

Serve chicken over spaghetti and with a side of salad.
