This classic salad was one that could be found at every family gathering and the rich flavor of mayonnaise and mustard makes ordinary potatoes pop. This is one recipe everyone should have in their arsenal, and its easier than you'd think!

  • 2 lb. potatoes, boiled
  • 1/2 C. cheddar cheese, cut into small cubes
  • 3 eggs, hard boiled and chopped
  • 1/2 C. mayonnaise
  • 1 Tbs. yellow mustard
  • 1 large dill pickle, diced
  • 3 stalks celery, diced
  • 1 small onion, minced
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 tsp. paprika
  • 1/2 tsp. pepper

Chop the potatoes into large cubes and put in a large mixing bowl
Add the pickle, cheese, onion, celery, and eggs
8In a smaller bowl, mix the mayonnaise and mustard with the sugar and salt until well blended
Stir in the paprika and pepper
Pour the dressing into the potato mixture and toss until all ingredients are thoroughly coated
Chill the salad overnight or for at least four hours to let the flavors meld
Serve cold
