  • 2 pounds of potatoes, peeled and chopped
  • 3 hard boiled eggs, chopped
  • 2 cups of mayonnaise
  • ½ cup of celery
  • ½ cup of red onions, chopped
  • ¼ cup of sweet pickle relish
  • 1 tablespoon Dijon mustard
  • 1 tablespoon of white vinegar
  • 1 teaspoon of sugar
  • ½ teaspoon of garlic powder
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder
  • ½ teaspoon of paprika
  • Green onions, for garnish

First, boil the chopped potatoes for 25 minutes in salted water, or until tender. Then, drain and let cool completely. In a large bowl, combine the potatoes, hard boiled eggs, mayo, celery, onion, relish, mustard, vinegar, sugar, garlic powder, and paprika. Stir until well combined and the potatoes are completely coated. Refrigerate for at least 1 hour before serving.
