  • 1 large onion, peeled
  • 2 large carrots, peeled, sliced
  • 1 C. frozen peas, thawed
  • 3 boneless, skinless chicken breasts, whole
  • 6 C. reduced-sodium chicken broth
  • 1 C. water
  • sea salt
  • freshly ground black pepper
  • 1/2 tsp. dried rosemary
  • 1 bay leaf
  • 2 C. wide dry egg noodles

Take out your crockpot. Add the onion, carrots, chicken, peas, chicken broth, salt, pepper, water, bay leaf, and rosemary into your crockpot. Cook the soup on high for four hours. When finished, take the onion out of the crockpot and use two forks to shred the chicken. Add the shredded chicken back into the crockpot along with the noodles. Cook for one additional hour on high, which is about how long it should take for the noodles to be cooked. Serve.
