Tuna melts are a lunchtime favorite and can be whipped up in a jiffy. This is a great recipe for those of you who keep cans of tuna in your cabinet. You can always have a nice, hot meal waiting for you at any time.

  • 1 can of chunked albacore white tuna
  • 8 slices of bread
  • 4 slices of American cheese
  • 4 tablespoons of mayonnaise
  • 2 tablespoon of red onions, chopped
  • 2 tablespoon of celery, chopped
  • 1 tablespoon of fresh parsley
  • 1 tablespoon of butter
  • Salt and pepper, to taste

As a buttered skillet warms over medium heat, combine the drained tuna, mayonnaise, red onions, celery, parsley, salt and pepper in a bowl. Once well mixed, place a slice of cheese onto bread and top with several heaping spoonfuls of tuna. Then, place the sandwich in the skillet and cook until the cheese has melted and the bread is slightly browned. Serve while hot!
