  • 2 cups of zucchini, pureed
  • 2 cups of flour
  • 2 eggs, beaten
  • ¾ cup of vegetable oil
  • ¼ cup of cocoa powder
  • ½ cup of chocolate milk
  • 1 ½ cups of brown sugar
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of baking soda
  • 1 teaspoon of nutmeg

Preheat oven to 350 degrees Fahrenheit.
In a bowl, combine zucchini pure, eggs, oil, milk and vanilla extract. Gradually add in flour and mix until the batter is smooth. Add cocoa powder, brown sugar, baking soda and nutmeg and stir thoroughly.
Distribute the batter into each cup on a greased muffin tin and bake for 45 minutes.
