Cod Filets in Tomato Sauce

This is an elegantly flavored dish with a variety of spices and the tartness of dry wine.

  • 1 lb. pkg. frozen cod filets
  • 1 garlic clove, minced
  • 1 C. tomato sauce
  • 1/4 tsp. pepper
  • 1/2 C. dry, tart wine (optional)
  • 1/3 C. olive oil
  • 1 lg. onion, sliced
  • 2 C. tomatoes
  • 1 tsp. salt
  • 1/2 tsp. marjoram
  • 1-2 potatoes (optional)

Heat oil in saucepan. Add garlic and onion. Cook until soft. Add remaining ingredients, except fish. Cook 20 minutes over moderate heat. Thaw and drain filets, add to tomato sauce and cook 10 minutes. With spatula, remove filets to platter. If sauce has not thickened, cook a little while longer. Then pour over fish. One or two chopped potatoes may be cooked in sauce before adding fish filets.
