  • 2 T. vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb. bones chicken breasts, cut into pieces
  • 2 tomatoes, chopped
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. oregano
  • Salt and pepper to taste
  • 1 (10 oz.) package frozen broccoli, thawed
  • 1 C. pasta, cooked and drained
  • ½ C. cheddar cheese, shredded
  • ¼ C. Parmesan cheese, grated

Preheat oven to 350 degrees. In a large skillet, heat oil and sauté onion and garlic until fragrant. Add in chicken and cook until no longer pink. Add inn tomatoes, tomato sauce, oregano, salt, and pepper; stir and simmer on low for 5 to 10 minutes. In a greased baking dish, combine pasta, chicken mixture, and broccoli. Top with cheddar and Parmesan and bake for 20 minutes.
