  • 2 avocadoes, peeled and diced
  • 2 radishes, diced
  • 2 cups of carrots, shredded
  • 2 cups of sprouts
  • 2 cups of purple lettuce
  • 1 cup of mozzarella cheese

First, prepare the rice paper rolls by submerging them in warm water for several minutes. While the rice paper softens, dice and shred the vegetables. Once prepared, fill the rice paper with about a handful of avocado, radish, carrots, sprouts, lettuce, and mozzarella. Roll together tightly and then tuck the loose ends. Slice evenly down the middle and serve with a dipping sauce of your choice!
